In this video Dennis and Benedicta Pollock share seven keto mug cakes/muffins that are very low carb and do not spike glucose much at all.

Basic Mug Cake Recipe:
1 egg
2 tbsp. heavy cream
2 tbsp. melted coconut or olive oil
1/2 tsp. baking powder
2 tbsp. coconut flour
2 tbsp. almond flour
1/2 tsp. vanilla extract
2 packets or 1.5 tbsp. of non-sugar sweetener
Shake of salt
Mix well in a bowl, transfer into large mug sprayed with cooking oil (not vegetable)
Bake in microwave for 70 – 90 seconds

3 packets or 2 tbsp. of non-sugar sweetener
2 Squares of Baker's unsweetened chocolate, shaved into tiny bits
(Optional) 1 tsp. of sour cream to make this moister and more cake-like
Mix well in a bowl, transfer into large mug sprayed with cooking oil (not vegetable)
Bake in microwave for 70 – 90 seconds

We love your videos. You use “mike” to see the results. My husband and I started keto on July 3rd this year and my blood sugar was hovering between 10 and 17. It is already down to 5.5. No medications because they were in the middle of changing them and I had not started the new one yet. Have had type 2 for several years and was getting frustrated. You give hope. We also follow Dr. Berg and Dr. Berry and it has been amazing. Thank you so much….. we now have a choice for a dessert treat to celebrate a milestone.

Hi Dennis, to make your lemon one more “lemony” add 1/2 tsp of lemon zest also I see you only went the sweet route. Grab your base recipe add 1/2 tsp of salt, 1/2 tsp of garlic powder, 1/2 tsp oregano, cut it in half an toast on a pan with bacon drippings (make 2 or 3 strips of bacon first); make a bacon sandwich or a burger with bacon.
Hi Dennis! Thought I’d share this with you and my fellow Beat Diabetes viewers. I took a page out of your playbook, coach. Having been a viewer and participant of your channel for at least two years, I’ve adapted my life to the fight against Type II. And recently have been rewarded with an A1C of a consistent 5.5, which had been closer to 8 before. However, this morning I decided to let Mike the Meter reinforce the things I’ve learned by doing a before and after breakfast blood glucose test. Before was 100. I then ate two eggs, two strips of bacon, a sausage patty, an English muffin, and hash browns with onions, followed by two cups of coffee into which I used half & half since the restaurant didn’t have heavy cream. Of course, the hash browns, muffin, and half & half are the terms I’ve eliminated from my diet. But as you often do, you try foods for testing purposes to record the outcome. After waiting the 1.5 hours, my glucose reading was 265!! Yes, horrible. I didn’t have any idea it would be that high, though I realized it would be higher than my new normal. The lesson here: stick to things that work; know that you’re never cured of Type II, but you can stay well ahead of it thru positive action; and lastly, use MTM to help you stay on track.

I liked the idea of adding a few strawberries or blueberries to help sweeten the mug cake. Also the peanut butter.
