I went off my common ordinary little routine keto meals last night to celebrate a family gathering. Garlic bread, homemade lasagna, beer, cookies, even a piece of sour gummie candy (wow, did that flood my unused sugar taste buds with intensity) – oh and a late night carb snack (may as well pack it all into one day!). My glucose rose 70 points at peak and I woke up 2 lbs heavier than yesterday morning, with a headache, achy limbs, dull head. Was that experiment worth it? Well, the family time was precious. But I will stick to my little old ordinary low carb most of the time. I’m not diabetic, but I don’t want to become one (like my grandmother) and high carb just doesn’t do my body good.
Great information as always. I’m going to try those low carb tortillas. I used to eat the regular ones with cheese and ham, fried in butter. 🙂 Now I can do that again, with a salad on the side. Perfect. Today I had some shirataki “rice” risotto with red peppers, garlic, soy sauce, dill, some butter and sour cream (gives the no carb rice the creamy consistency of risotto). If you prepare this right, you can’t tell the difference from regular rice. It’s all in the preparation and desperation is the mother of invention. 🙂

I enjoyed what you shared with us. And, I don’t think your food choices are boring at all. For example the BLT made looked scrumptious to me; make sense to make it with one slice of bread to further lower the blood sugar. And the hamburger with the egg? Dennis thanks for sharing. These are super easy. A lot of times we can over complicate eating healthy. I don’t mind eating the same thing everyday for lunch , every week I switch it up. I will make a pot of chili and have it for lunch. I do try and designate certain days for meals like Taco Tuesday, and recently I’m doing Pizza Friday. Lately my dessert has been a few chopped strawberries with DIY whipped cream and/or melted dark chocolate.
Hey Dennis love all your vids. I just got my a1c checked I’m down to a 5.8 in less than a year. Back in July of last year my A1c was 15.3 so although i haven’t gotten it to below 5.7 yet its nice to know that I am on the right track. Thanks to you and the awesome info.

If you keep things simple, you’re more likely to stick with it. Another keto YouTuber that I follow keeps it super simple by eating the same thing every day for a week. This helps save money, as well as avoiding food wastage and decision fatigue.
What people think of as a diabetic diet is what everyone should eat, as it’s simply healthy eating, regardless of medical condition. Also, I make my hamburger steaks with a mix of half chuck (80%) and half ground sirloin (90%). This way I get the tenderness of the chuck, but a beefier flavor from the ground sirloin. Take care and be well.
Two years ago, my A1C was 10.2 and my blood sugar lived in the 250 – 300 level. 6 months later after following a low carb diet my A1C was 5.9 and blood sugar was in the 100 – 140 range. Now 2 years later my levels are in the 80 – 120 range and my fasting levels in the morning rarely rise above 100. I have cooked low carb for insulin dependant diabetics and seen a 30% to 50% reduction in insulin usage and a major reduction in the blood sugar peaks and crashes. No matter what your favorite food is that you cannot live without, someone has made a low carb or keto version of it. If you’re watching this, I promise this strategy has worked for me personally and 5 others I’ve cooked for a long period of time. Also, you can find recipes that even non diabetics can’t tell the difference. I make street tacos using Mr Tortillas 1 carb tortillas by frying them and chocolate using unsweetened chocolate with confectioners swerve and kids and teenagers eat it all up just like it came from Taco Bell or from the candy store. The final thing is if you can measure it, you can change it. A continuous glucose monitor like Dennis’s Freestyle Libre is perfect for tweaking your diet especially if you have to eat out occasionally. You can see with a swipe what foods and recipes work and which ones are too high. It’s the same as a normal meter but much easier. With everyone I wish you good luck. Congratulations to achieving that good number. Do you feel any different? I’m not diabetic but being 66 I thought it would be a good idea to take a closer eye on my carb intake. I’ve dropped the carb intake and I notice that I don’t have cravings like I used to have at times.

Last week I invented the Quizza. It is a cross between a crustless quiche & a low carb pizza. The base is made out of a batter consisting of 4 eggs, a splash of milk & 1 modest tablespoon of fine oatmeal plus seasoning. I cook this in the oven & when it is firm I take it out & arrange a generous selection of suitable pizza topping items on top & return it to the oven untill they are cooked. This makes 4 portions, for a light lunch.
I usually add some lactose free cheese, plenty of green leaves, often baby spinach, tomatoes & peppers, passata, or tomato puree, or pesto, sometimes fresh basil, parsley, or pak choi, or olives, sometimes I add some cooked fish, chicken or bacon, sometimes I throw on some nuts & seeds, I like to pile on the veg’ so may include some grated carrot, green beans or anything else I regard as healthy & sometimes put grated carrot or shredded greens in the base.
As well as being diabetic I have to cope with being on the very restrictive low FODMAP diet & hope this recipe may be helpful to someone else in the same circumstances. People on the low FODMAP diet cannot eat cauliflower so are unable to use that to make a pizza base & that is how the Quizza came into existence. All the best from the U.K.
Nothing wrong with having some bits of protein & a variety of salady bits & nuts & seeds to make an enjoyable & varied meal. That is something I can throw together provided I have shopped thoughtfully.

@Chris Boyd On Amazon look for “shirataki konjac” products. You will find all kinds of noodles (and the afore mentioned rice alternative) made from the konjac root.

Hi, I would like to know what you are doing to bring your glucose level down after one of the tests you do with high carb foods? When I mess up and eat something that spikes my glucose it sometimes takes 1 or 2 days for my levels to go back to acceptable. I usually end up taking a Glipizide pill or a supplement like IC5 with CBD isolate oil and an CBD isolate pill. I prefer taking the supplements to get my glucose levels down if I eat too much carbs. The good news is with low carb eating my A1C went from 10 to 8 to 6.5 to 6. Going from 8 to 6 took 3 months. This time frame points to exactly when I got serious about eating low carb. Prior to that I was using supplements and meds and not watching carbs enough.
You can now prevent prediabetes.
I didn’t listen when I was younger.
There were no logical answers behind all the so called answers.
You keep eating that, you are going to be diabetic.
Speaking of sugary items. But nothing bad about a loaf of bread or skillet of potatoes. Just the sugar.

I ate earlier. Had 30 minutes 40 point spike. Then 1hr. Another 20points added to that.

I eat the same thing every day. Meat, eggs and sometimes air fried ribs. Liver every other day. Heart once in a while. My dog eats the same thing every day, so I can do that too.
Hello Dennis. I like your style! I can relate to you. My diet has gotten very simple and I eat the same foods over and over again. I used to think this was a bad thing but now I’m enjoying the simplicity of it and grocery shopping has become a breeze.

How does this continous monitoring meter work…do u need to poke your fingers every hour you have to check?
@SP The Freestyle Libre is placed on the back of your arm by yourself. It works for two weeks. The device stores the glucose readings every 5 minutes. You swipe the device with a reader. The reader can pull up to 8 hours of readings. You can see a graph on the reader and even transfer the readings to a computer vis the software if you wish. You don’t have to poke your fingers at all.

I love your answer. You are so right. I go one step further and use coupons to purchase organic lowcarb foods. I only drink water lots of it organic decaf tea and organic coffee. Drinking no carb drinks helps with not having to graze and have snacks. Alot of times we are thirsty and not hungry. Dehydration is sometimes a problem with diabetics. Please stay hydrated. Also portion control helps with soups which ends up learning your carb content..I like to eat God’s foods that are lowcarb. If you think about it God made his foods in the. right proportions etc.I challenge diabetics to make a diabetic grocery run buying basically low carb real foods and not having foods in your cart in boxes and cans that are highly processed Dennis you are right. My favorite dessert is New York and pumpkin cheesecake. I have made crusts with a combination of butter, almond flour, walnuts or pecans and flaxseed (plain or with or with cocoa powder) The pumpkin/chocolate crust version actually LOWERED my blood sugar…. surprised!
