INGREDIENTS:
SALTED BOILING WATER FOR PASTA
100 GRAMS PASTA
180 GRAMS OF ZUCCHINI, SPIRALIZED
2 EGG YOLKS
30 GRAMS PARMESAN CHEESE, PLUS MORE FOR GARNISH
30 GRAMS PECORINO ROMANO CHEESE, PLUS MORE FOR GARNISH
170 GRAMS OR ¾ CUP OF CHOPPED PANCHETTA
2 TEASPOONS BLACK PEPPER
INSTRUCTIONS
BRING WATER TO A BOIL, ADD SALT. THEN ADD PASTA, COOK PER DIRECTIONS UNTIL SLIGHTLY UNDER DONE.
WHILE PASTA IS BOILING, SAUTE PANCHETTA OVER MEDIUM LOW HEAT AND RENDER OUT THE FAT.
DRAIN OFF THE FAT SAVING IT FOR LATER. SET PANCHETTA AND FAT ASIDE.
IF NOT ALREADY DONE, SPIRALIZE THE ZUCCHINI AND SET ASIDE.
IN A LARGE BOWL, SEPARATE THE EGG YOLKS INTO THE BOWL, ADD CHEESE AND PEPPER AND MIX TOGETHER.
ONCE PASTA IS READY, DRAIN AND ADD TO THE BOWL WITH CHEESE MIXTURE AND SAVE SOME OF THE PASTA WATER. THEN ADD ZUCCHINI AND RENDERED FAT FROM PANCHETTA.
TOSS TOGETHER, AND ADD THE HOT PASTA WATER TO THE MIXTURE, TO BOTH COOK THE EGG, ZUCCHINI AND MELT THE CHEESE.
IF NEEDED, FINISH THICKENING THE SAUCE OVER THE STEAMING POT OF REMAINING PASTA WATER. ONCE THICKENED, SERVE IMMEDIATELY WITH ADDITIONAL CHEESE, PEPPER AND PARSLEY.

Are you supposed to cook the zucchini noodles at all as well or put them in raw and they just cook in the heat of the pasta?
That is such a small portion.
