In this video Dennis Pollock shares his go-to pancake recipe which a) tastes good, b) is easy to make, and c) barely budges his blood sugar. He reveals several post-meal tests to demonstrate this meal's minimal effect upon blood sugar.
Coconut Pancake Recipe:
3 eggs
3 Tablespoons heavy whipping cream
3 Tablespoons olive or melted coconut oil
3 Tablespoons of coconut flour
1 Tablespoon of almond flour
1/4 teaspoon salt (or two shakes from a shaker)
1/4 teaspoon baking powder
1 packet of stevia
Blend all ingredients together and use as a pancake mix. Cook the way you would with traditional pancakes, but at a slightly lower temperature, since this recipe has a significant egg content.

Thanks for this recipe; I made it, but instead of using stevia, I mashed half of a very riped banana, only because I don’t use stevia or any kind of sweetners; it was delicious! I also did not use any syrup, but just a bit of butter on my pancakes.

I made these today with fantastic results. I tried other recipes and this has the best texture for the batter as well as the finished pancake. These taste similar to other low carb pancakes with like ingredients I’ve had but the ease of preparation puts these in the lead. Thank you.
I make my pancakes with eggs, coconut flour, baking powder, some protein powder with sweetener in it, and some cottage cheese. Absolutely love it. I make them every day if I’m not extremely short on time.
I loved having pancakes too and was deeply saddened by their loss from my current diet. I recently purchased a pancake/waffle mix from a company called “Birch Benders” at my local Costco. Much more expensive than regular mixes but for the ability to enjoy the treat so welcome. The ingredients are very similar to yours Dennis. These easy to make breakfast meals with need nothing more needed than water and of course some blueberries certainly add to quality of life.
I just made the pancakes. Had only 2 eggs so that’s what went into them. They were delish!! Best recipe for pancakes yet. Well done.

I have to tell you that since I started watching you, just a week ago, my sugars run between 90 and 123. It’s amazing for me. My doctor said for me to keep the sugar under 180 (after meals). Wow, huh? Thank you!!!!

D Singh Bananas are super high in sugar! Higher than candy bars. Stevia is is all natural and won’t raise blood sugar at all.
Love your channel and watch many of your videos. Been craving pancakes and waffles, but didn’t know how to beat the carbs. I’m type 2 for 10 years now and Metformin and Oseni just wasn’t keeping my numbers down. I will let myself die before I ever take insulin so I’ve really embraced the Keto diet low to no carb lifestyle. I make healthy meals every day and eat my meals within a 6 hour window fasting for 18 hours each day. My numbers have come down a lot. I was 108 yesterday morning which is very low for me. I’m typically 135 – 180. Thanks

@BrassRainbow556 After watching Sten Ekberg review the various sugar replacements, i switched to Stevia recently.
OK I made them. Granted I’m no cook, but I put in all the ingredients and it was more of a paste than pancake batter. One thing I added was strawberry preserves made with Splenda. The taste was OK, but the texture was kind of grainy. So I don’t know if I didn’t mix it well enough, or didn’t cook it enough. I only made one pancake and have some batter left to make another. After one hour blood sugar was 96 up from 83. Update: I made another batch. This time I added more whipping cream and had my wife cook them. Turned out perfect.

I’ve been diabetic for a very long time but now I’m in my 40’s and my a1c is 5.3 and trying so hard and watching what I eat. I’ve been looking on tiktok and other places for a sugarfree pancake with no luck till now. I will most definitely try this out. Thank you so much for sharing this recipe. ❤️
