In this video Dennis Pollock shares a new, updated, improved, mega-chocolate cake which can be made in a mug in 90 seconds. This recipe enables you to make a low-carb diabetic friendly dessert which can last you for up to four evenings. Wow!!! This recipe has so few carbs that when Dennis tested his blood sugar before eating and then one hour afterwards, his blood sugar dropped significantly at his post-meal test. Double Wow!!
Recipe for Chocolate Cake in-a-mug:
In a bowl mix the following ingredients:
– 1 egg
– 2 Tbsp Olive Oil
– 2 Tbsp heavy whipping cream
– 1 heaping Tbsp almond flour
– 1 heaping Tbsp coconut flour
– 1 heaping Tbsp cocoa (non-sweetened)
– 2 shakes of salt
– 2 packets of stevia or Truvia, or the sweetener of your choice
– 1 heaping Tbsp of sour cream
– 1/2 tsp of baking powder
– 2 squares of Bakers unsweetened chocolate, shaved into tiny pieces
To be placed on cake after baking:
– handful of chopped walnuts
– Whipped cream
Stir ingredients thoroughly in a bowl until smooth
Transfer the mixture into a large mug sprayed with cooking spray
Shake the mug a few times to get the mixture even with no lumps at the top
Bake in microwave for 90 seconds
Cut into four slices
Press walnut pieces into the cake
Top with whipped cream after the cake has cooled

Used this mug cake recipe from you for a while now. I souped it up with Kerry Gold butter melted and added to the egg and olive oil with 3 heaping tablespoons of sour cream. Hard to believe it does so well. Takes moist to a different dimension. Thanks Dennis.
Thank you for a great video again! Anything we accomplish in life starts with the mindset we bring to the challenge. We have to take ownership of what food is “ours” and not concern ourselves about what others have. I enjoy adding just a little cacao powder to my coffee by blending it with 15 ml. half and half and five drops of stevia in the bottom of my cup until a chocolate paste forms, then i brew my coffee on top of that and stir. Since the chocolate is in a paste form at the bottom of the cup it will blend into the hot coffee nicely. I can add more half and half as desired since it only has 1 net carb but I don’t exceed 45 ml. It can be drank hot or put in the fridge to drink cold later if preferred. I believe your sugar dropped after the meal because of the dawn effect. Our liver is stronger than our pancreas is my guess, it produces glucose faster in the morning than the pancreas can keep up with. Enjoy your videos as always. Keep up the good work!

@JitinDoesStuff This was exactly my situation when I first started having blood sugar issues – terrible bg fluctuations, too high and too low. Yet my fasting glucose and A1c were normal. I figure my insulin levels must have been extremely high. Once I went low carb the bg stabilized and all was well.
Beat Diabetes! So does this mean you were not ever diabetic and prediabetic? Also I would love to see a series of impact on blood sugar when eating certain complete meals , that include starches and protein like meat and potatoes etc.Great job by the way, you are making an impact on the world!
Great video Dennis. Have you tried chaffles yet and how they affect your blood sugar? YouTube and Facebook has dozens of chaffle recipes and people are losing weight and talking how keto friendly it is, but I’ve not seen any test results.
Thanks for another tasty recipe Dennis. Will definitely give it a try. One of my after meal desserts is a square piece of Lindtt supreme dark chocolate (90% cocoa). It’s fairly big so it satisfies me. The whole 100g bar has 14g of carbs, of which 11g are fiber carbs, so a measly 3g of net carbs. It also has 30g of saturated fat. But I didn’t just settle for the nutritional facts, I tested myself when I first added it to my dessert menu. Before eating one square piece, my blood glucose was at 97, 30 minutes later it was at 102, and an hour after it read 94, so I guess it passed the Mike The Meter test with flying colors!

I love your channel .I was diagnosed recently with diabetes .It’s taken some getting used to!
