WE MAKE CAKE MIX COOKIES WITH PILLSBURY SUGAR FREE YELLOW CAKE MIX
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 30 minutes with cooling time
Servings: 12

1 box Pillsbury Sugar Free Yellow Cake mix
2 eggs
⅓ cup Vegetable oil
1 teaspoon Lemon extract
1 teaspoon Vanilla bean paste or extract
INSTRUCTIONS:
Preheat oven to 350°F.
Mix together eggs, oil, lemon and vanilla extracts.
Fold in cake mix. Once all raw mix is combined, set aside.
Line a cookie sheet with parchment paper and portion cookies with either an ice cream scoop or a spoon. Recipe should yield 20 – 24 cookies.
Bake in the oven for 12 minutes. Remove from oven and cool for 10 minutes.
Serve and enjoy.
** Please note that this mix contained Maltitol as the sweetener. This sweetener has been shown to have a laxative effect.**

I just checked out the Vanilla Bean paste you used in this video and was disappointed to learn that the first ingredient is SUGAR….
First, thanks for the comment. I get the sugar concern however, considering how little you use of the paste, and the other adaptations to make this and our other recipes low carb and virtually sugar free, its a great choice and so much better than extract. Thanks again and be safe!
Hi try Molasses and beet root, that is what we use in our organic drops, so each drop has about 1.5% sugar but it is all natural.. just fyi DCoats.

You can find the cake mixes on Amazon, but Walmart and Meijer carry it and they are much more affordable. The stores here run out quite fast, so I buy 8-10 boxes at a time. That lasts me about three or four months 🙂
This is so cool, I had no idea that this could be done. I have some diabetic family members who cant eat the cake mix cookies that I usually make. This looks like a great alterative. I found you by doing cake mix cookie research, and I’m so glad I did. Thank you for sharing

Joy, I typically make gooey butter cakes by adding cream cheese. This recipe would probably call for 6 to 8 ounces of cream cheese to work. I have a recipe I can share if you wish. Even better, would you like to see a video on it? Thanks for the question and you rock.
Could you use unsweetened applesauce, or another ingredient in place of the oil?
My husband wants a lemon cake using this mix. Do you have a recipe for that?
Just made these after a from scratch recipe turned out bad, these are amazing! I used almond extract instead of lemon and they hit the spot! Great Christmas “sugar” cookies in a pinch, happy holidays!
